No-Burn Fish

Ingredients:

  • 2 fish fillets (flounder, cod or striper is best but will work with any flaky fish)
  • 1 medium onion
  • 1 lemon
  • 3 tab sweet butter (approx. 1 teaspoon each)
  • Paprika
  • Garlic powder
  • Salt and pepper

Directions:

  1. Cut half the onion into round slices and arrange them in the center of a sheet of aluminum foil.
  2. Add 1 tab butter and the juice from half the lemon.
  3. Place one fish fillet over the onion slices.
  4. Cut 2 or 3 more round onion slices and place them on top of the fish fillet.
  5. Add 1 tab of butter.
  6. Place the second fish fillet on tip of the first.
  7. Cut the remained of the onion into round slices and lay them over the top of the second fillet.
  8. Add 1 tab butter and the juice from the other half lemon.
  9. Sprinkle with paprika, garlic powder, salt and pepper to taste.
  10. Fold up the aluminum foil over the fish taking care to make sure the edges are securely wrapped and sealed to form a tight package.
  11. Place the fish package in a pre-heated oven at 350 degrees for 20-25 minutes.

    Alternatively, place the fish package under a broiler or on hot BBQ coals for 10-15 minutes per side.
  12. When done carefully unwrap the aluminum foil (watch out for the steam!).
  13. Server with tartar sauce and fresh lemon, corn, tossed salad and Italian bread.

NOTE: The time to cook is approximate. Thicker fillets will require more time to cook.

Comments:

The beauty of this recipe is that so long as the aluminum foil is properly sealed, for all intents and purposes, the fish can’t be over cooked. Also, the lemon juice, butter and natural juices make it virtually impossible to burn the fish.


Baked Dill Cod

Ingredients:

  • 2 codfish fillets (will also work well with haddock, hake, striper or any large flaky fish)
  • 4 whole sprigs of fresh dill
  • 1 lemon
  • 3 tab sweet butter (approx. 1 teaspoon each)
  • 1 small can white beans (drained)
  • 1 small tomato diced
  • Garlic powder
  • Salt and pepper

Directions:

  1. In the bottom of an oven safe glass or ceramic (do not use metal) baking dish (bread loaf size and shaped) place 2 springs of fresh dill.
  2. Add 1 tab butter and the juice from half the lemon.
  3. Place one fish fillet over the dill.
  4. Place 1 sprig of dill on top of the fillet.
  5. Add 1 tab of butter.
  6. Place the second fish fillet on tip of the first.
  7. Place 1 sprig of dill on top of the second fillet.
  8. Add 1 tab butter and the juice from the other half lemon.
  9. Empty the can of white beans around the fillets (not on top!).
  10. Sprinkle the diced tomato over the white beans around the fillets.
  11. Sprinkle garlic powder, salt and pepper to taste.
  12. Cover with aluminum foil.
  13. Place the baking dish a pre-heated oven at 400 degrees for 20-25 minutes. About 10 minutes before done remove the aluminum foil cover.
  14. Server with tartar sauce and fresh lemon, corn, tossed salad and Italian bread.

NOTE: The time to cook is approximate. Thicker fillets will require more time to cook. This recipe also works well with fish steaks (cod steak, haddock steak, etc.)

 


Tangy French Dressing (Low fat!)

Ingredients:

  • 1/2 cup tomato Ketchup
  • 1/2cup vegetable oil
  • 1/4 cup white vinegar
  • 1 tablespoon confectioner’s sugar
  • 1 clove fresh garlic (thinly cut)
  • Fresh black pepper (just a pinch)
  •  

Directions:

  1. Place all ingredients in a salad dressing shaker.
  2. Shake the container vigorously to ensure complete mixing of ingredients (may take several minutes!)
  3. For best results chill the dressing for at least 1 hour before use.
  4. Remove the garlic slices before serving (optional).
  5. Keep refrigerated until ready to use. After serving, refrigerated any unused amount.
  6. Shake well before serving to ensure thorough blending.
  7. Serve over any type of tossed salad.
  8. Croutons optional.

Comments:

This recipe tastes just like French Dressing in a good restaurant or from the store bottle but costs only pennies to make!


Tangy Broiled Fish

Ingredients

  • Fish fillets
  • 2 tablespoons vegetable oil
  • 2/3 cup tomato juice
  • 1 5/8-ounce envelope French dressing mix
  • 3 tablespoons vinegar
  • Lime wedges

Directions:

  1. Place fish in a single layer in a shallow baking dish.
  2. In a mixing bowl combine ingredients and mix thoroughly.
  3. Pour mixture over fish and let stand for 30 minutes, turning once.
  4. Remove fish, keeping the sauce for basting.
  5. Place fish on a well-oiled broiler pan. Broil about 4 inches from the source of heat for 4 to 5 minutes.
  6. Turn fish carefully and baste with sauce.
  7. Broil 4 to 5 minutes longer or until fish flakes easily and is no longer translucent in the center.
  8. Serve with lime wedges.

Grilled Fish Steaks


Ingredients:

  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 2 tb Lemon juice
  • 2  cloves fresh minced garlic
  • Fish steaks (cod, bass, swordfish, mahi-mahi etc.)
  • 1/2 cup orange juice
  • 1/4 cup chopped fresh parsley
  • >1/3 tablespoon fresh ground pepper

Directions:

  1. In a large mixing bowl combine soy sauce, orange juice, ketchup, chopped parsley, lemon juice, pepper, and minced garlic.
  2. Add fish steaks to mixture in bowl.
  3. Cover and marinate steaks in refrigerator for 2 hours.
  4. Remove steaks from marinade and save marinade for later basting.
  5. Grill fish over hot coals 6 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with saved marinade.
